Better Late than Never

The August Final Friday reception featured an outstanding salmon spread, and the recipe was requested. In going through my backlog of e-mails, I found the recipe!

It's embarrassing to admit I'm this behind in cleaning out the inbox, but this is a great recipe, and so I'll get over the embarrassment in order to share it.

Alice's Salmon Spread
1 large package Philadelphia Cream Cheese (1/3 less fat version)
1 Tbsp. lemon juice
1 tsp. prepared horseradish
1 oz. package sliced smoked salmon, chopped
1 cup shredded asiago, romano, parmesan cheese mix
1 Tbsp. chopped green onion
1 large cucumber, cut into 1/4 inch slices

Mix cream cheese and horseradish until well-blended, then add salmon, cheese, onion, and cucumber. (Or put it all in a bowl & blend with immersion blender.)
